The recipe was for peppers and eggs, which is exactly that, peppers and eggs. But I loathe peppers, so I decided to try zucchini.
Heat olive oil in a cast iron skillet. Add chopped onions, chopped potatoes, and sliced zucchini. Cook down.
Scramble in some eggs. When the eggs are cooked, breakfast is ready.
I saw a very similar recipe in a cookbook, which added parmesan cheese and soy sauce as well.
