No knead bread

This is the Lodge 4 quart dutch oven, which is just the right size for making no knead bread.

I thought it would be complicated-- not at all. In fact, there's a website with pictures of a 4 year old making this bread, to prove how easy it is.

3 cups bread flour, 1/4 tsp yeast, 1 tsp salt, 1 1/2 cups warm water.

Mix all ingredients in a bowl. Cover with plastic wrap. Let sit for 18-20 hours.

With wet hands, place dough onto a floured surface. Fold it over until it's mostly in a ball. Place on a floured towel and cover. Leave for 2 hours.

30 mins before the 2 hours are up, put the pot in the oven at 450 to preheat. Put the dough ball in the hot pot, cover, return to oven for 30 mins. Take off the cover, bake another 15 mins.

Remove to a cooling rack. It will crackle as it cools. Slice and eat.

It's great with butter!

Oh, needless to say... you sure can cook a lot more than just no knead bread in this pot!
