the afternoon shift

In today's economy, you take the jobs you can get, and they won't always be at convenient hours.

I was very fortunate to land a job not long after our layoff due to the offshore drilling moratorium. It happens to be during the afternoon shift, right during the time that I normally cook.

But because I use cast iron, that's not a problem.

I cook my meals in the morning before work, package them up to refrigerate, and then just reheat in cast iron when I get home from work.

Dinner is ready, just as hot and fresh as if I had just cooked it! That would not be the case if I reheated in the microwave.
