refrigerator breakfast skillet

What do you do, when you've run out of milk, so cereal isn't an option, and you're out of yogurt too? You make breakfast out of leftovers.

I had a leftover baked potato, some leftover ham, and some leftover squash.

So I heated some olive oil in a cast iron skillet, chopped an onion and cooked it down.

Cut up the baked potato, ham and squash, added, and cooked some more.

Cracked 4 eggs into the pan and scrambled. Added soy sauce, parmesan cheese, bacon bits.

It could have used more eggs, but it was still good!
