scratch pancakes

I once thought "scratch pancakes" meant made from Bisquick, and was quickly told otherwise.

Here's the real way to make scratch pancakes:

2 cups flour, 3 tsp baking powder, 1 tsp salt. OR 2 cups self rising flour.

1 tbsp sugar, 1 egg, 4 tbsp melted butter, approximately 1 1/2 cups milk. More milk for thinner, less milk for thicker.

You can substitute buttermilk, but you might want to combine buttermilk and milk, unless you like a very strong buttermilk taste.

Mix all ingredients in a bowl, slowly adding milk until the batter is your preferred thickness.

Preheat the cast iron griddle and spray Pam (or melt butter). Cook the pancakes.

I'm pretty sure the recipe for scratch waffles is very similar, if not the same.
