batter baked chicken

A more healthy alternative to fried chicken is what I call "batter baked" chicken.

The chicken pieces are breaded in bread crumbs or crushed corn flakes. I've even used crushed goldfish crackers before.

Then baked in the oven at 350 until done.

Here's a tip I just learned: Use a cast iron grill pan, instead of a skillet. The air will circulate under the chicken and make it more crispy.
