my first tikka dish

One thing I like about the Lodge pro-logic skillets, with sloped sides, is that I can cook small portions of Asian dishes, without having to haul out my wok.

Tonight I made my first tikka, which is an Indian dish. It's normally cooked in a tandoor, which is an Indian oven that heats up to 1000 degrees.

Or you can cook it in a cast iron pan.

Mix the following in a bowl:

1/2 cup plain yogurt
1 tbsp minced garlic
1 tbsp lemon juice
1 tsp olive oil
ginger
cumin
cinnamon
black pepper
chili powder
ground cloves
nutmeg

Then marinate your shrimp or chicken in the fridge. I used shrimp.

Heat your cast iron pan on high heat, then stir fry the mixture until the meat is cooked.

Serve over rice.

  1. I find I reach for my Chef Skillet (CK2) allot these days when doing small batches myself... Your recipe looks interesting :)

  2. I like the chef skillet too... the 12 inch pro logic is bigger and holds more food but not as much as the wok
